Pinto Bean Croquettes
2 cups cooked and drained pinto beans
1 egg
3 tablespoons of flour
1/2 of a green bell pepper, diced
1/4 yellow onion, diced
salt and pepper to taste
1 tablespoon bouillon
1 teaspoon paprika
1 teaspoon garlic powder
Instructions
Drain beans and mash with a potato masher until you can see a few intact beans left
Add bell pepper, flour, and seasoning
Add egg
Add oil to skillet and heat. Fry on medium heat for 4-5 mins on each side or until browned. The browner, the better!
